Picnic Food Contest!

I work for an insurance agency and right now the owners have bought 3 agencies in different towns in Massachusetts. Since we are expanding and always growing, we have quarterly office activities to have the employees interact with each other. In April, we had an Easter Egg Hunt. One “golden” egg had a $20 bill, and I found it! This month, we are having a Picnic Food Contest at work and I am really excited about it, mostly because I absolutely LOVE to cook and bake for other people. It’s next week so I have been on Pinterest sporadically this morning between emails to look and see what kind of picnic food I could make that is simple and won’t really require much to make, hold, carry, and eat! Also, refrigeration comes into play because we do not have a very big fridge here at work! But I will have to make it work somehow. My boss said that not many people are excited about it, which is a bummer! But that’s okay because I will just make 2 dishes (hehe). Oh yeah I forgot to mention: every contest has a winner! Everyone is going to vote on their favorite dish and whoever gets the most votes wins a prize. I am probably cheating by bringing in more than one dish but I will just tell people that I brought in whichever dish comes out better (the other one will be anonymous, ha!) How funny would it be if I won this contest as well? People would glare, people would stare, but it doesn’t take much, just make food people!

Anyway, here are my ideas on the food I am making for the contest:

Finger Food: As a “main dish” I guess, I am going to bring Mini Corn Dogs. Basically make corn muffins but stick a mini wiener in the middle while you bake the muffins! So for this one all I will really need is corn muffin mix + ingredients, mini wieners, and some cute muffin liners (hopefully I can find red and white checker board- how cute!)

Dessert: I am going to bring in “Summer Sand Cake.” This is easy to me cause it is really just Dirt Cake with a spin. Instead of Oreos, you use all Nilla Wafers and only about 3 or 4 Oreos to create the “sand.” The filling is the same recipe that you use to make Dirt Cake (cream cheese, butter, powdered sugar, milk, cool whip, and vanilla pudding). I am going to layer it all in a sand bucket and use the shovel that comes with it as the spoon to really give it that summer and “sand” effect (obviously I will buy a new sand bucket and shovel- lol)

I may also bring in a Strawberry Lemonade cause I saw a cool recipe on Pinterest for that as well, but we will see!

So I am definitely making a trip to the dollar store and Walmart tonight! I will definitely take pictures and post a blog about my foods I am making for the contest.
