Hello everyone! Sorry I have not posted in a while. I had originally planned to blog in North Carolina but not only did we not have WiFi at our resort (and used half of our total data allowance 4 days into our new billing cycle….yikes), but, to sum it up, we were just too busy doing nothing and it was great. We had one of the most relaxing weeks ever. Usually we run around like crazy and try to fit everything into a week, and I honestly thought that was how the week was going to go! It was nice to watch tv in our PJs until 11, then head to the beach to soak in all that sunshine and saltwater that is oh so good for the soul, then cook a nice dinner and head out to the fishing pier to enjoy a nice sunset or mini golf and have some icecream. Yupppppp, it was great! Some might say boring, but to us? Heaven. We seriously considered taking every south ramp we saw back to the OBX (sorry NOT sorry). Our resort was perfect and being able to enjoy each other’s company was the best. We made a stop in Williamsburg, Virginia to go to Busch Gardens and walk around colonial Williamsburg over this past weekend. Those were the 2 busiest days of the week and somehow they went by the slowest!
Anyway, to stop my rambling, here are some pictures from our trip! Ranging from 5/22 to 6/1 (I put descriptions with them). I would seriously recommend going to the Outer Banks in North Carolina if you can. We have never heard of it and now we are in love! It is relaxing, non-commercialized, and people are friendly and island life just seems enjoyable. Enjoy people! -Steph

Sorry I haven’t posted much lately. Tyler and I are getting ready for our big road trip to the Outer Banks in North Carolina! We are heading to Kitty Hawk in North Carolina on Friday night (basically Saturday morning) and we are really excited. We are going to do some kayaking and picture-taking and exploring and surfing and pier walking, basically as much as we can while we can. I am definitely torn on whether or not I am excited for the 12 hour drive or dreading it. I think I am more excited because I know at the end, we will be on vacation officially. I also do love road trips. Something about packing up a car with your person and driving to a destination is so fulfilling to me, I love it.
I am stuck though because we only have a half kitchen (yes, half). This means we only have 2 burners and a microwave for cooking. No oven!!! I am so sad cause I could make us dinner all week if we only had an oven. But I think we will survive with what we have (I am pretty sure we are bringing a grill). We are trying not to go out much so we can save money for more important and worth while things, so I am trying to set up a menu to food shop with. I will definitely be turning to Pinterest for a little inspiration. A couple of nights, we even want to pack up dinner and head down to the beach for a picnic and some sunset surfing (hello, that sounds amazing right now).
So far, I found:
stove top chicken recipes that look great (with bread crumbs and some Hidden Valley ranch mix, or marinated)
basic boiled pasta and sauce
sandwiches are great for the beach picnic
sides (like veggies and rice) can easily be cooked up in the microwave
corn on the cob can be boiled up pretty quick
macaroni and cheese anyone?
So I think I have enough meals planned out, including a couple of dinners out and dinners on the grill. I am really excited!! Next is my shopping list and finding time to actually food shop (passion planner you are toooooo good). I am really excited, counting down the hours, minutes, seconds!!!
Sorry I haven’t blogged recently! I have some stuff I wanna post about. I honestly need to get myself a planner, I feel like I would be more organized and I love having prepared blog post ideas.
Last weekend, my boyfriend booked a spur of the moment trip to St John, USVI. Literally booked his plane ticket last Saturday and leaves tonight! He is going backpacking in the Caribbean🌊🌴 as much as he wants me to go, I have to stay behind. Obviously I would love to go, I have been there and it’s beautiful. I feel like he needs this trip by himself. He’s been going through a lot lately and I feel like he needs to find some inner peace. Hopefully a solo trip will help him. I’m nervous for him cause he is going alone, I would be an absolute wreck if anything happened and I was so far. He is my heart and soul. Right now he is asleep on my lap and I just don’t want him to go😔. But I will not be selfish!!
We are heading out to North Carolina in less than 3 weeks. I am SO excited. We are driving down and I honestly cannot wait. I love road trips! Kitty Hawk is where we will be journeying to. We are staying from Saturday to Saturday and then driving up to Virginia beach/Busch Gardens Saturday into Sunday. It will be an amazing trip, and I just can’t wait to get away for a whole week. No emails or phone calls. Just the outer banks and the love of my life. Sigh💕😊😍 I have been pinning things from Kitty Hawk and everything is beautiful. I’m sooooo excited!
Well, I have to bring Tyler to the airport in 3 hours so I need to get some sleep! I will blog this week, I have a couple recipes to share (and one I actually took pics!!!!!). Have a nice night yall!🌙
